Brook Williamson, Top Chef winner and co-ownerof Playa Provisions says Bolognese is one of her go-to recipes. “It’s great for an individual, a couple, or a crowd, easy to assemble, and is healthy and filling all at the same time,” she says. “In addition to tomatoes and your meat of choice (ground beef, turkey, or chicken), it’s easy to toss in whatever veggies and spices you have on hand. I like how flexible and versatile it is, yet I know I’ll get something warm and comforting at the end, no matter what. In addition to mixing it in with pasta, it can also be eaten with bread, put in a baked potato, made into lasagna – not to mention, it’s great to freeze and reheat later for leftovers.”
Tasty Turkey Bolognese from Chef Brooke Williamson of Playa Provisions

Makes about 6 cups
2 tablespoons olive oil
½ yellow onion, minced
½ cup diced carrot (about 1 carrot)
3 garlic cloves, minced
1 pound ground turkey, preferably dark meat
1 tablespoon tomato paste
2 tablespoons brown sugar
½ cup chicken stock
1 32-ounce jar tomato sauce
3-4 sprigs fresh thyme
Fish sauce, to taste
Fresh basil and thyme for garnish
Parmigiano Reggiano, freshly grated (optional)
In a large pot, heat the olive oil over medium heat. Sauté the onion, carrot and garlic until fragrant and tender, about 2-3 minutes.
Add the ground turkey to the pot, browning slightly, breaking up with a wooden spoon (or potato masher). Stir in the tomato paste and brown sugar, cooking until the tomato paste begins to caramelize.
Pour in the chicken stock and tomato sauce, toss in the thyme and bring the mixture to a simmer. Cook for about 30 minutes, until the sauce thickens. Season to taste with fish sauce and serve over a short-noodle pasta (such as Rigatoni), garnishing with fresh herbs and grated Parmigiano Reggiano.
The sauce will keep for about a week, refrigerated in an airtight container.
