Mediterranean Macro Bowl
A fresh and family-friendly meal packed with protein, fiber and Mediterranean flavor.

Ingredients
For the Bowl
- 4 cups chopped romaine lettuce
- 2 cups chopped kale
- 2 cups cooked lentils
- 1 cup cooked quinoa
- 2 grilled chicken breasts, sliced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup Kalamata olives, sliced
- 1/2 cup hummus
- 1/2 cup tzatziki
For the Lemon Vinaigrette
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper to taste
Directions
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt and pepper.
- Combine the cooked lentils and quinoa in a large bowl. Toss with half of the lemon vinaigrette.
- Divide the lettuce and kale among four serving bowls.
- Top each bowl with the lentil-quinoa mixture, grilled chicken, tomatoes, cucumber and olives.
- Add a dollop of hummus and tzatziki to each bowl.
- Drizzle with the remaining vinaigrette and serve immediately.
