Huevos Revueltos con Tortilla
Ingredients:
3 large eggs, beaten
2 tortillas, sliced
1 piece deli ham, sliced
1/2 Roma tomato, diced
1 tablespoon oil or butter
Salt and pepper, to taste
Garnish with Cotija cheese
Top with hot sauce/ketchup (optional but strongly encouraged)
Instructions:
Begin by slicing your tortillas and ham into even square slices then add to an oiled non-stick pan, place on medium heat. Let that crisp up for about 5-10 minutes or until ham and tortillas get a desired amount of color.
In the meantime, beat 3 eggs in a bowl. Once ham and tortillas are to your liking, add eggs.
Fold your eggs in with the contents of the pan for a light and fluffy end result. To ensure food safety, eggs should be cooked until the center reaches 160°F. Once cooked, plate.
Top off with fresh tomato, Cotija cheese and a touch of hot sauce or ketchup and enjoy.
